These Strawberry Muddy Buddies are crunchy, sweet, and bursting with fruity flavour—a perfect snack for movie nights, parties, or just because!
ingredients:
- 6 cups Rice Chex cereal
- 1 ½ cups freeze-dried strawberries
- 1 cup white chocolate chips
- ½ cup strawberry-flavoured cake mix (or powdered strawberry drink mix for an extra fruity punch)
- 1 cup powdered sugar
- 1 tbsp unsalted butter
- 1 tsp vanilla extract
- Pinch of salt
Instructions:
- Prep a large bowl: Pour the Rice Chex cereal into a large mixing bowl and set it aside.
- Process the strawberries: Place freeze-dried strawberries in a food processor and pulse until they form a fine powder. Set aside.
- Melt the white chocolate: In a microwave-safe bowl, combine white chocolate chips and butter. Microwave in 20-second intervals, stirring between each, until smooth and fully melted. Stir in the vanilla extract and a pinch of salt.
- Coat the cereal: Pour the melted white chocolate mixture over the Rice Chex cereal. Gently stir to coat all the cereal pieces evenly.
- Add the strawberry powder: Immediately sprinkle the powdered freeze-dried strawberries over the coated cereal. Stir to combine so the strawberry flavour adheres well.
- Finish with cake mix and powdered sugar: Mix the powdered sugar and strawberry cake mix in a separate bowl. Pour this mixture over the cereal and toss until every piece is coated in a delicious strawberry-powdered sugar blend.
- Cool and serve: Spread the Strawberry Muddy Buddies on a baking sheet to cool for 10-15 minutes. Once cooled, enjoy!
